This is a link to a great minestrone soup. It is low fat and I think it’s delicious. To make the tomato puree just blend up a large can of diced or whole tomatoes (I think it’s the 28 oz can) in the blender and add to the soup. I also omit the fresh tomatoes. I double this recipe and we eat it for dinner and lunch the following day.
